Instructions

  1. Prepare the Leaves

    Rinse the warm (vamu) leaves and tamarind leaves under cold water, shake off excess water and pat dry with a kitchen towel. Roughly chop them into bite‑size pieces.

    In a mixing bowl combine chickpea flour, baking soda, salt, turmeric, chaat masala and oil. Gradually whisk in water until you obtain a smooth, thick‑but‑pourable batter (similar to pancake batter).

    Add the chopped leaves to the batter and gently toss until every piece is evenly coated.
