Troubleshooting
Meatballs fall apart during cooking.
Roll meatballs firmly and avoid overhandling once formed. If mixture is too loose, add a tablespoon of breadcrumbs.
Sauce is too thin.
Simmer uncovered to reduce, or add a cornstarch slurry (1 tsp cornstarch mixed with 2 tsp water).
Meatballs are undercooked.
Return to air fryer for an additional 3-5 minutes, checking internal temperature.
Sauce is too salty.
Add a splash of water and a pinch of sugar or honey to balance flavors.
Storage
Refrigerator: Store in airtight container for up to 3 days.
Freezer: Freeze in airtight container for up to 2 months. Thaw overnight in fridge before reheating.
Room temperature: Not recommended due to meat and sauce.
Make-Ahead Tips
- Meatballs can be formed and refrigerated up to 24 hours ahead.
