Ingredients

- 2 tbsp Green Chutney (coriander‑mint chutney, store‑bought or homemade)
- 1 small Tomato (thinly sliced)
- 1 small Onion (thinly sliced)
- 2 slices Cheese Slice (any meltable cheese, e.g., cheddar or processed cheese)
- 4 slices Bread Slices (white or whole‑wheat sandwich bread)
- 2 tbsp Unsalted Butter (softened, for spreading and toasting)
- 2 tbsp Cooking Oil (vegetable or canola oil for frying the potato mixture)
Instructions
Boil Potatoes
Place the peeled potatoes in a saucepan, cover with water, add a pinch of salt and bring to a boil. Cook until fork‑tender, about 10 minutes.

Mash and Season
Drain the potatoes and mash them in a mixing bowl. Add turmeric, red chili powder, salt, chaat masala, garam masala, chopped coriander and green chili. Mix until evenly combined.

Fry the Potato Mixture
Heat oil in a frying pan over medium heat. Add the bay leaf and let it sizzle for a few seconds. Add the spiced mashed potatoes, stir, and cook for 3‑4 minutes until the mixture turns slightly golden and the flavors meld.
