Peel, core, and dice the three Granny Smith apples and the one sweet eating apple. Keep the cooking apple pieces together and set the diced sweet apple aside for later.

Cook Apples in Butter
Heat a large skillet over medium heat, add the butter, and let it melt. Add the diced cooking apples, stir, and cook for about 5 minutes until they begin to soften.
Time: PT5M
Season the Apple Mixture
Add granulated sugar, a pinch of salt, lemon juice, cinnamon, nutmeg, and vanilla extract. Continue cooking for another 5 minutes, stirring, until the apples are tender and the mixture is fragrant.
Time: PT5M
Make Cornstarch Slurry
In a small bowl, whisk together 1 tablespoon cornstarch with 2 tablespoons water until smooth.

Thicken the Filling

Time: PT10M
Add Topping
Brush the tops of the pockets with a little more egg wash and sprinkle with demerara sugar (or cinnamon sugar) for a crunchy glaze.
Time: PT2M
Bake the Pockets
Place the pockets seam‑side down on a parchment‑lined baking sheet and bake for 22 minutes, or until the tortillas are golden and crisp.
Time: PT22M
Temperature: 200°C
