- 1 kg Assorted Meat (beef, tripe, shank) (cut into bite‑size pieces)
- 1 tsp Salt (to taste)
- 2 cubes Seasoning Cubes (e.g., Maggi or Knorr)
- 2 medium Onion (chopped)
- 1 tbsp Ginger (minced)
- 3 cloves Garlic (minced)
- 3 pieces Fresh Pepper (scotch bonnet or habanero) (chopped, seeds removed for less heat if desired)
- 1 tbsp Beef Seasoning Mix (store‑bought or homemade blend)
- 2 tbsp Pepper Soup Seasoning (traditional Nigerian pepper soup spice blend)
- 2 liters Water (cold water)
- 1 handful Scent Leaves (also called 'nchuanwu' or basil leaves)
Instructions
Prepare and season meat
Wash the assorted meat under running water, then cut into bite‑size pieces. Set aside in a bowl.

First boil the meat with aromatics
In a large pot, combine the meat, salt, seasoning cubes, chopped onion, minced ginger, minced garlic, chopped fresh pepper, and beef seasoning mix. Stir well, then add enough cold water to cover the meat (about 2 L). Bring to a boil, then reduce to a gentle simmer and cook until the meat is tender, about 35‑40 minutes.

Add the remaining fresh pepper, extra chopped onion, a little more ginger and garlic, the rest of the beef seasoning, and the pepper soup seasoning blend. Stir, add a splash of water if the broth looks low, and cook for 5‑7 minutes.
