Troubleshooting

The dough is too sticky

Add 1‑2 tablespoons of extra flour and knead a few minutes longer.

The buns do not puff during cooking

Make sure the dough has rested the full 20 minutes and that the pan is hot enough before placing the dough.

The filling sauce is too watery

Let it reduce a bit more or add a teaspoon of cornstarch diluted in cold water.

The shrimp remain rubbery

Do not overcook them; remove them as soon as they turn pink.
