Ingredients
- 400 grams Fresh Sweet Corn Kernels (Removed from 4 ears of corn)
- 1 cup Water (For blending the corn)
- 12 fluid ounce Evaporated Milk (Canned evaporated milk)
- 3 cup Water (For simmering the base)
- 2 tablespoon Pilon (Mexican unrefined cane sugar) (Adjust to taste; can use white sugar)
- 1 piece Cinnamon Stick (Whole stick for flavor)
- 1 pinch Salt (Regular table salt)
- 2 tablespoon Cornstarch (For thickening)
- 0.33 cup Cold Water (For cornstarch slurry)
- 1 tablespoon Mexican Vanilla Extract (Adds aromatic flavor; regular vanilla can be used)
- 0.5 teaspoon Ground Cinnamon (Adds warm spice)
- 0.25 teaspoon Freshly Grated Nutmeg (Optional, for extra aroma)
Instructions
Remove Corn Kernels
Using a sharp knife, stand each ear of corn upright and slice downwards to remove all kernels into a bowl.

Blend Corn Puree
Place the 400 g of corn kernels into the blender cup, add 1 cup water and 12 fl oz evaporated milk, then blend until completely smooth.

Prepare Sweet Base
In a large pot, combine 3 cups water, pilon (or sugar) to taste, 1 cinnamon stick, and a pinch of salt. Bring to a boil, stirring until the sugar dissolves, then simmer for 10 minutes.

Strain Cinnamon Stick
Remove the cinnamon stick pieces by pouring the liquid through a fine wire mesh strainer back into the pot.

Simmer Corn Puree
