Ingredients
- 2 pieces Bread Slices (any white, whole‑grain or sourdough bread)
- 1 piece Ripe Avocado (medium size, fully ripe)
- 1/2 piece Lemon (fresh juice only)
- 1 piece Green Chilli (finely sliced, optional for heat)
- 2 tbsp Coriander Leaves (chopped fresh)
- to taste pinch Salt (kosher or table salt)
- 1 piece Small Onion (thinly shredded)
- 5 pieces Cherry Tomatoes (roughly chopped)
- 1 tsp Oregano (Dried) (optional, can use fresh basil instead)
- 1 tsp Olive Oil (extra‑virgin preferred)
- 1 tsp Everything Bagel Seasoning (store‑bought blend of sesame, onion, garlic, etc.)
- 1 tsp Unsalted Butter (softened, for light spreading)
- 1 piece Garlic Clove (halved, optional for rubbing)
Instructions
Toast Bread
Heat a non‑stick pan over low heat. Place the bread slices in the dry pan and toast until golden on one side, then flip and toast the other side.

Make Avocado Mixture
Cut the avocado in half, remove the pit, scoop the flesh into a bowl and mash with a fork leaving it slightly chunky. Stir in lemon juice, sliced green chilli, chopped coriander and salt.

Make Onion & Tomato Salad
Thinly shred the onion and roughly chop the cherry tomatoes. Combine in a bowl, add oregano (or fresh basil), a few drops of lemon juice, 1 tsp olive oil and salt, then toss quickly.

Garlic Rub (Optional)
Halve a garlic clove and rub the cut side onto both sides of the toasted bread for a subtle garlic aroma.

Assemble Avocado Toast
