Ingredients
- 1 piece Large Flour Tortilla (10‑inch soft tortilla)
- 2 large Eggs (BC brand, scrambled)
- 2 strips Bacon Strips (cooked until crisp)
- 0.25 fruit Avocado (mashed with lime juice, salt and pepper)
- 1 tsp Lime Juice (freshly squeezed)
- 1 pinch Salt (to taste)
- 1 pinch Black Pepper (to taste)
- 1 tbsp Grated Cheddar Cheese (shredded, light sprinkle)
- 1 tsp Oil or Butter (for pan; can use leftover bacon grease)
Instructions
Cut the Tortilla
Place the large tortilla on a cutting board and make a single vertical slit at the center mark, leaving the tortilla otherwise intact.

Cook the Bacon
In the skillet over medium heat, cook the bacon strips until crisp, then set aside on paper towels. Reserve a little bacon grease for later.

Scramble the Eggs
