Ingredients
- 2 pints Cherry Tomatoes (washed and stems removed)
- 0.5 cup Olive Oil (extra virgin)
- 3 cloves Garlic (large, minced)
- 0.25 teaspoon Salt (fine sea salt)
- 0.25 teaspoon Black Pepper (freshly ground)
- 200 grams Feta Cheese (block, crumbled later)
- 340 grams Rotini Pasta (uncooked)
- 0.25 cup Fresh Basil (roughly chopped)
- 0.5 cup Reserved Pasta Water (saved from cooking pasta)
Instructions
Preheat Oven
Set the oven to 400°F and let it preheat fully.

Prepare Tomatoes
Wash the cherry tomatoes, remove any stems, and spread them evenly in the large baking dish.

Season Tomatoes
Drizzle ½ cup olive oil over the tomatoes, add the minced garlic, ¼ tsp salt, and ¼ tsp black pepper. Toss gently to coat.

Create Space for Feta
Push the tomatoes aside in the center of the dish to make a small well and place the block of feta cheese there.

Bake
Place the dish in the preheated oven and bake for 35 minutes, until the tomatoes burst and the feta is soft and slightly golden.
