- 1 cup Frozen Yellow Corn (no need to thaw)
- 1 cup Water (for simmering beans and corn)
- 0.5 tsp Salt (to taste)
- 1 package Cauliflower Rice (12 oz, follow package cooking instructions)
- 2 tbsp Lime Juice (freshly squeezed)
- 2 tbsp Fresh Cilantro (chopped)
- 2 tbsp Mayonnaise (regular)
- 1 tsp Hot Sauce (adjust heat to preference)
- 1 tsp Lime Zest (optional, for extra zing)
Instructions
Brown Ground Beef
Heat the large skillet over medium‑high heat. Add the ground beef, let it sit untouched for about 1 minute to develop a crust, then break it up and continue cooking until no pink remains.
