- 1/2 cup Green Chutney (coriander‑mint chutney, homemade or store‑bought)
- 1/4 cup Tamarind Chutney (sweet‑sour tamarind sauce)
- 1/4 cup Roasted Peanuts (unsalted, coarsely crushed)
- 1/4 cup Roasted Chickpeas (Dalia) (dry roasted, lightly salted)
- 2 tablespoons Almond Slivers (lightly toasted)
- 2 teaspoons Chaat Masala (store‑bought)
- 1 teaspoon Red Chili Powder (adjust to heat preference)
- 2 tablespoons Lemon Juice (freshly squeezed)

Instructions
Prepare Vegetables and Potatoes
Boil the potatoes until tender, then peel and dice them. Finely chop the onion and tomato, and roughly chop the coriander leaves.

In a blender combine fresh coriander leaves, mint leaves, green chilies, ginger, garlic, roasted cumin powder, salt, and a splash of water. Blend until smooth and set aside.

Make Tamarind Chutney
Heat 1/4 cup tamarind pulp with jaggery, a pinch of salt, and a little water in a saucepan over medium heat. Stir until the jaggery dissolves and the mixture thickens slightly, then cool.
