- 2 tbsp Unsalted Butter (cut into cubes)
- 2 Garlic Cloves (minced)
- 1 tsp Fresh Rosemary (finely chopped)
- 2 Onion (medium, diced)
- 2 Celery Stalks (chopped)
- 60 ml Heavy Cream (2 fl oz, chilled)
- 60 g Blue Cheese (crumbled)
- ½ Orange (juiced (about 2 tbsp))
Instructions
Prepare Ingredients
Slice the pork tenderloin into 1‑inch medallions. Season with salt, pepper, dried garlic, cumin and smoked paprika. Chop the onions, celery, mince the garlic cloves and finely chop the rosemary.

Sear the Pork
Heat the skillet over medium‑high heat, add the butter, and once melted add the pork slices. Sear 2‑3 minutes per side until golden brown.

Transfer the seared pork to a plate and set aside while you build the sauce.
