- 2 lb Flank Steak (trimmed, room temperature)
- 1 tsp Kosher Salt (for seasoning both sides)
- 1 tsp Freshly Cracked Black Pepper (coarse grind preferred)
- 2 tbsp Beef Tallow (rendered, solid at room temperature)
- 1 tbsp Grass‑Fed Butter (unsalted, cut into small pieces)
Instructions
Preheat Skillet
Place the cast iron skillet on the stove over medium‑high heat and let it heat for 3‑4 minutes until a drop of water sizzles and evaporates instantly.

Season the Steak
Pat the flank steak dry with paper towels. Sprinkle 1 tsp kosher salt and 1 tsp freshly cracked black pepper evenly on both sides.
