- 2 tablespoons Olive Oil (for searing)
- 15 grams Unsalted Butter (melted, for searing and sautéing)
- 1 teaspoon Salt (kosher or sea salt)
- 0.5 teaspoon Black Pepper (freshly ground)
- 500 grams Mushrooms (sliced)
- 1 piece Onion (medium, diced)
- 200 grams Mozzarella (fresh, shredded or sliced)
- 100 grams Greek Yogurt (plain, full‑fat)
Instructions
Prepare cauliflower steaks
Trim the leaves, cut the cauliflower head into 1.5 cm thick steaks, season both sides with salt and black pepper, and drizzle with olive oil.

Sear cauliflower steaks
Heat olive oil and butter in a large skillet over medium heat. Add the cauliflower steaks and cook 4‑5 minutes per side until golden brown.

Sauté mushrooms and onion
In a second skillet melt a little butter, add the diced onion and sauté 2 minutes. Add sliced mushrooms, season with salt and pepper, and cook 5‑7 minutes until the mushrooms release their moisture and turn brown.

Make yogurt mixture
In a mixing bowl combine Greek yogurt with a pinch of salt and pepper; stir until smooth.
