Ingredients
- 600 g Potatoes (Russet potatoes, washed and optionally peeled)
- 480 ml Vegetable Oil (For deep frying, use a neutral oil with high smoke point)
- 1 tbsp Cheese Powder (Fine cheese powder, can be cheddar or parmesan flavor)

Instructions
Slice the potatoes
Wash the potatoes, peel if desired, then slice them into very thin strips (about 1‑2 mm thick) using a sharp knife or mandoline.

Parboil the slices
Place the potato slices in a large pot, cover with cold water, bring to a boil, and cook for exactly 1 minute.

Shock in ice water
Drain the potatoes and immediately transfer them to a bowl of ice‑cold water for 1 minute to stop the cooking process.

Dry the potatoes
Drain the chilled slices in a colander and pat them completely dry with paper towels.
