Ingredients
- 1 cup All-Purpose Flour (sifted)
- 3 large Eggs (room temperature)
- 1 small Tomato (diced)
- 1 small Onion (finely chopped)
- 2-3 pieces Green Chilies (finely chopped)
- 1 handful Fresh Cilantro (chopped)
- 1 tsp Salt (to taste)
- 1 tsp Asafoetida (Hing) (optional, adds depth)
- 1 tsp Black Pepper Powder (freshly ground)
- 2 tbsp Oil or Butter (for batter, plus a little for cooking)
- 1 cup Water (room temperature)
- 1/2 cup Mozzarella Cheese (shredded, any melting cheese works)
- 1 tsp Red Chili Flakes (for garnish)
Instructions
Chop Vegetables
Finely dice the small tomato, small onion, 2‑3 green chilies and a handful of fresh cilantro.

Beat Eggs
Crack the three eggs into a bowl and beat until the yolk and white are fully combined.

Combine Egg‑Veg Mix
Add the chopped vegetables to the beaten eggs, then stir in 1 tsp salt, 1 tsp asafoetida (optional) and 1 tsp black pepper powder. Mix well.

Prepare Batter
In a separate bowl combine 1 cup all‑purpose flour, 1 egg, 1 tsp salt, 2 tbsp oil (or melted butter) and 1 cup water. Whisk until the batter is smooth and free of lumps.

Cook Thin Crepes
Heat the non‑stick skillet over low to medium‑low flame. Lightly brush with a few drops of oil. Pour a ladleful (~¼ cup) of batter, swirl to spread thinly. Cook 30‑40 seconds until the surface is set, then flip and cook another 20 seconds. Transfer to a plate. Repeat to make 2‑3 crepes.

Cook Omelette Layer
In the same skillet, pour about one‑third of the egg‑vegetable mixture (roughly one egg’s worth). Cook until the bottom sets but the top is still slightly runny.
