Ingredients
- 1 kg Chicken Thighs, bone‑in, skinless (cut into bite‑size pieces)
- 200 g Plain Yogurt (full‑fat, at room temperature)
- 2 Onion (medium, finely chopped)
- 2 tsp Garlic Paste (or 4 cloves minced)
- 2 tsp Ginger Paste (or 2 tsp freshly grated ginger)
- 2 tsp Garam Masala (freshly ground if possible)
- 1 tsp Turmeric Powder
- 1 tsp Red Chili Powder (adjust to heat preference)
- 1 tsp Cumin Powder
- 1 tsp Coriander Powder
- 200 g Tomato Puree (canned or fresh blended)
- 3 tbsp Vegetable Oil (high smoke point)
- to taste Salt
- 2 tbsp Fresh Cilantro (chopped for garnish)
- 150 ml Water (adjust for desired sauce consistency)
Instructions
Marinate the Chicken
In a mixing bowl combine chicken pieces with yogurt, half of the garlic paste, half of the ginger paste, turmeric, chili powder, and a pinch of salt. Mix well and let rest for at least 15 minutes (or up to 2 hours in the refrigerator).

Sauté Onions
Heat oil in a large skillet over medium heat (≈180°C). Add the chopped onions and sauté, stirring occasionally, until they turn golden brown, about 8 minutes.

Add Aromatics
Stir in the remaining garlic and ginger paste, cooking for 1 minute until fragrant. Then add cumin, coriander, and garam masala, cooking another 30 seconds.
