Chef Tips from the Video
- Use a wok or a large, well‑heated skillet for the best stir‑fry results.
- Keep all ingredients pre‑pped and within arm’s reach before you start cooking.
- A drizzle of toasted sesame oil at the very end adds an authentic Asian aroma.
- If you like heat, add a pinch of red‑pepper flakes with the sauce.
Troubleshooting
Chicken turns out dry.
Do not overcook; keep the cooking time short over high heat. The cornstarch and oil in the marinade help retain moisture.
Noodles become soggy.
Drain the pasta well and add it to the hot pan quickly; stir only a few minutes so they stay al dente.
Sauce is too salty.
Add a splash of water or a pinch more sugar to balance the flavor.
Vegetables are overcooked.
Stir‑fry vegetables quickly over high heat; keep them crisp‑tender.
Storage
Refrigerator: Store leftovers in an airtight container for up to 3 days.
Freezer: Not recommended, but can freeze for up to 1 month; reheat gently and add a little water to loosen the sauce.
Room temperature: Do not leave at room temperature for more than 2 hours.
Make-Ahead Tips
- Prepare the sauce ahead of time and keep it refrigerated for up to 2 days.
- Marinate the chicken up to 2 hours in advance for deeper flavor.
- Cook the spaghetti ahead, toss with a little oil, and reheat in the pan with the sauce.
