- 1 teaspoon Baking Soda
- 1 teaspoon Salt
- 1 teaspoon Sugar
- 1 large Onion (finely chopped for raita and chutney)
- 4 cloves Garlic (peeled)
- 2 pieces Green Chili (seeds removed for milder heat, finely chopped)
- 1/2 cup Tomato Puree (or 2 fresh tomatoes blended)
- 1 tablespoon Ginger‑Garlic Paste
- 1 teaspoon Garam Masala
- 1/2 teaspoon Turmeric Powder
- 1/2 teaspoon Cumin Seeds (for tempering raita)
- 1/4 teaspoon Roasted Cumin Powder (for raita)
- 1 teaspoon Tamarind Paste (for chutney)
- 2 tablespoons Mixed Pickle (store‑bought Indian mixed pickle)
- 2 tablespoons Fresh Cilantro (chopped, for garnish)
- As needed Water (for dough and cooking chickpeas)
Instructions
Soak Chickpeas
Rinse 1 cup dried chickpeas and soak them in plenty of water for at least 8 hours or overnight. Drain and set aside.

In a mixing bowl combine sifted flour, sugar, salt, baking powder and baking soda. Add yogurt, oil and mix. Gradually add water to form a soft, non‑sticky dough. Knead for 5 minutes, cover with a damp cloth and let rest for 30 minutes.

Transfer the soaked chickpeas to a pressure cooker, add fresh water covering them by 2 inches, and cook on medium heat for 2 whistles (≈15 minutes). Release pressure, drain, and set aside.

Heat 2 tbsp oil in a saucepan. Add cumin seeds; when they sizzle, add half the chopped onion and sauté until golden. Stir in ginger‑garlic paste, remaining onion, turmeric, tomato puree, and salt. Cook 5 minutes, then add the cooked chickpeas, garam masala, and 1 cup water. Simmer uncovered for 20 minutes, stirring occasionally, until thick and flavorful.
