Critical Steps — Do Not Skip

Chef Tips from the Video
- Use pre-cooked wheat (e.g., 'Mediterranean wheat') to save time.
- Add a splash of fresh lemon juice to the dressing for extra freshness.
- Serve the salad on a bed of young arugula sprouts for a colorful presentation.
Troubleshooting
The dressing separates.
Resume whisking and add a few drops of warm water or a little more mustard, then whisk vigorously.
The wheat is too soft.
Cook the wheat 1 to 2 minutes less next time or rinse under cold water to stop cooking.
Storage
Refrigerator: Store in an airtight container for 2 to 3 days.
Freezer: Not recommended, the wheat texture deteriorates.
Room temperature: Do not leave at room temperature for more than 2 hours.
Make-Ahead Tips
- Prepare the dressing and wheat the day before, keep them separate.
