- 12 oz Rotini Pasta (dry, uncooked)
- 1 cup Cherry Tomatoes (halved)
- 1 cup Black Beans (drained and rinsed, canned)
- 1 cup Corn Kernels (drained, canned or frozen)
- 0.25 cup Red Onion (finely diced)
- 0.5 cup Green Bell Pepper (diced)
- 0.5 cup Red Bell Pepper (diced)
- 1 tablespoon Jalapeño Pepper (minced; remove seeds for less heat)
- 2 tablespoons Fresh Cilantro (chopped)
- 3 tablespoons Olive Oil (extra virgin)
- 2 tablespoons Lime Juice (freshly squeezed)
- 1 tablespoon Red Wine Vinegar
- 1 teaspoon Honey
- 0.5 teaspoon Ground Cumin
- 0.5 teaspoon Chili Powder
- 0.5 teaspoon Salt
- 0.25 teaspoon Black Pepper (freshly ground)
Instructions
Cook Pasta
Bring a large pot of salted water to a rolling boil, add the rotini pasta and cook 8‑10 minutes until al dente. Drain in a colander and rinse under cold water to stop cooking.

Make Dressing
In a mixing bowl whisk together olive oil, lime juice, red wine vinegar, honey, ground cumin, chili powder, salt and black pepper until the mixture emulsifies.

Halve the cherry tomatoes, dice the red onion, green and red bell peppers, mince the jalapeño, and chop the cilantro.
