Ingredients
- 2 cups Corn Kernels (thawed if frozen)
- 1 whole Green Bell Pepper (seeded and chopped)
- 1 whole Orange Bell Pepper (seeded and chopped)
- 1 whole Yellow Bell Pepper (seeded and chopped)
- 0.5 medium Red Onion (finely chopped)
- 1 cup Black Beans (cooked, drained and rinsed)
- 1 cup Pinto Beans (cooked, drained and rinsed)
- 0.5 cup Black Olives (sliced from a small can)
- 1 whole Jalapeño Pepper (seeded and minced; adjust to taste)
- 0.5 cup Feta Cheese (crumbled)
- 1 whole Avocado (diced; add just before serving to prevent browning)
- 3 tablespoons Lime Juice (freshly squeezed from 3 limes)
- 1 teaspoon Lime Zest (from one lime, optional but recommended)
- 3 tablespoons White Wine Vinegar
- 0.5 cup Olive Oil (extra‑virgin preferred)
- 1 tablespoon Taco Seasoning
- 2 tablespoons Honey
- to taste Pink Himalayan Salt
- to taste Black Pepper
Instructions
Chop Vegetables
On a cutting board, seed and finely chop the green, orange, and yellow bell peppers, the red onion, and the jalapeño. Slice the black olives if not already sliced.

Prepare Beans and Corn
Drain and rinse the black beans and pinto beans. If using frozen corn, thaw it in a colander and pat dry. Transfer beans and corn to the large mixing bowl.

Make the Dressing
In the small bowl, combine lime juice, lime zest, white wine vinegar, olive oil, taco seasoning, honey, salt, and pepper. Whisk vigorously until the mixture emulsifies.

Add the chopped peppers, onion, jalapeño, olives, and crumbled feta to the bowl with beans and corn. If serving immediately, fold in the diced avocado. Pour the dressing over everything and toss gently until evenly coated.
