- 1 tsp Sesame Oil (toasted)
- 1/4 tsp Black Pepper (freshly ground)
- 2 tbsp Chopi Sauce (Korean chili paste; can be thinned with a little water)
- 2 tbsp Chili Oil (for drizzling at the table)
Instructions
Prepare the Dough
In a mixing bowl combine the sifted all‑purpose flour and salt. Gradually add the warm water while stirring until a shaggy dough forms. Knead on a lightly floured surface for about 5 minutes until smooth and elastic.

Rest the Dough
Cover the dough with a damp cloth and let it rest for 15 minutes. This relaxes the gluten and makes rolling easier.

Cook the Mushrooms
Heat a skillet over medium heat, add a splash of oil, then sauté the minced garlic for 30 seconds. Add the chopped mushrooms, season with a pinch of salt, and cook until they release their moisture and turn golden, about 5 minutes. Transfer to a bowl and let cool.

Make the Filling
