Ingredients
- 4 cups Cherry Tomatoes (halved)
- 8 Garlic Cloves (peeled and minced)
- 3 tablespoons Olive Oil (extra virgin, divided)
- 200 grams Feta Cheese (firm block, not crumbled)
- 12 ounces Penne Pasta (dry)
- to taste Black Pepper (freshly ground)
Instructions
Preheat Oven
Set the oven to 400°F (200°C) and let it preheat while you prepare the ingredients.

Prepare Tomatoes and Garlic
Wash the cherry tomatoes and cut them in half. Peel the garlic cloves and mince them.

Toss with Olive Oil
In a mixing bowl, combine the halved tomatoes, minced garlic, and 2 Tbsp olive oil. Season lightly with black pepper and toss to coat.

Arrange on Baking Sheet
Spread the tomato‑garlic mixture on a baking sheet in a single layer. Place the whole block of feta cheese in the center and drizzle the remaining 1 Tbsp olive oil over everything.

Roast Tomatoes and Feta
Place the sheet in the preheated oven and roast for 30 minutes.

Broil for Finish
Switch the oven to broil and cook for an additional 5 minutes, or until the feta is lightly golden on top.

Cook Pasta
While the tomatoes are roasting, bring a large pot of salted water to a boil. Add the penne and cook 10‑12 minutes, until al dente.

Drain Pasta

Combine and Finish
