- 2 tbsp Unsalted Butter (softened, divided)
- 0.5 Large Onion (half, diced)
- 1 tsp Dried Thyme
- 1 cup Heavy Whipping Cream (full‑fat)
- 2 oz Cream Cheese (softened)
- 1 tbsp Fresh Lemon Juice (about half a lemon)
- 0.25 cup Chicken Stock (low‑sodium)
- 2 cups Cauliflower Rice (fresh or frozen)

Instructions
Heat Skillet and Add Fat
Place the skillet over medium‑high heat, add 2 tbsp olive oil and 1 tbsp butter, letting the butter melt but not burn.
