- 2 large Eggs (room temperature)
- 240 ml Water (room temperature)
- 230 g All-Purpose Flour (for batter)
- 300 g All-Purpose Flour (for breading mixture)
- 1 tsp Sweet Paprika Powder (for breading)
- 1 tsp Curry Powder (for breading)
- 700 ml Vegetable Oil (for deep frying, medium‑high smoke point)
- 10 g Unsalted Butter (cut into small pieces for sauce)
- 6 tbsp Milk (whole milk recommended)
- 100 g Cheese Slices (mild cheddar or similar, shredded if needed)
- 1 handful Kitchen Paper Towels (for draining excess oil)
Instructions
Prepare the Chicken
Trim any sinew, cut the chicken breast into bite‑size pieces, sprinkle with salt and pepper, and gently flatten with a meat tenderizer to an even thickness.

Make the Batter
In a mixing bowl combine 230 g flour, smoked paprika, a pinch of salt, 2 beaten eggs and 240 ml water. Whisk until smooth and free of lumps.

Chill the Coated Chicken
Add the chicken pieces to the batter, toss until every piece is fully coated, cover the bowl with plastic wrap and refrigerate for 1 hour.

Prepare the Breading Mixture
In a separate shallow plate mix 300 g flour, sweet paprika and curry powder. Stir to distribute evenly.

Bread the Chicken
Remove the chicken from the fridge, let it sit 5 minutes at room temperature, then roll each piece in the seasoned flour mixture, pressing lightly to stick.
