- 2 cloves Garlic (minced)
- 1 small Onion (diced, yellow or white)
- 2 Tbsp Homemade Taco Seasoning (mix of chili powder, cumin, paprika, etc.)
- 1 cup Fire‑Roasted Tomatoes (canned, drained)
- ½ cup Roasted Corn (frozen or canned, drained)
- ¼ cup Roasted Jalapeños (canned, drained, sliced)
- ¼ cup Red Onion (diced)
- ¼ cup Bell Pepper (diced, any color)
- 2 Tbsp Fresh Cilantro (chopped)
- 2 Tbsp Lime Juice (freshly squeezed)
- ½ tsp Salt
- ¼ tsp Black Pepper
- ¼ tsp Chili Powder
- 1 cup Minute Rice (Instant White Rice) (cooked per package instructions)
- ½ cup Black Beans (canned, rinsed and drained)
- 2 Tbsp Zesty Ranch Sauce (low‑fat, 1.5 g fat per serving)
Instructions
Prep All Ingredients
Mince the garlic, dice the onion, red onion and bell pepper, chop cilantro, and squeeze the lime. Measure out the rice, beans, corn, jalapeños, and seasonings.

Cook the Instant Rice
Bring 1 cup water to a boil in a saucepan, stir in the instant rice, cover and remove from heat. Let sit for 5 minutes, then fluff with a fork.
