Ingredients
- 11 oz Cherry Tomatoes (halved if large)
- 8 oz Feta Cheese (block, any brand)
- 4 cloves Garlic (pressed)
- 12 oz Broccoli Florets (pre‑cut, trim brown ends, cut into small bite‑size pieces)
- 12 oz Short Pasta (such as fusilli, rotini, or corkscrew)
- 0.25 cup Fresh Basil (chopped, plus extra for garnish)
- 0.25 cup Parmesan Cheese (freshly grated, optional extra for serving)
- 2 tbsp Olive Oil (extra‑virgin preferred)
- to taste Salt (use sparingly because feta is salty)
- to taste Black Pepper (freshly ground)
Instructions
Boil Water
Fill a large pot with water, place over high heat, cover, and bring to a rapid boil.
Time: PT5M
Preheat Oven
While the water is heating, preheat the oven to 400°F.
Time: PT5M
Temperature: 400°F
Cook Pasta
Add a generous pinch of salt to the boiling water, then add the short pasta. Cook al dente, about 9–11 minutes.
Time: PT12M
Prepare Broccoli
Trim any brown ends from the broccoli florets, then cut the florets into very small bite‑size pieces.
Time: PT5M
Assemble Sauce Ingredients
In an oven‑safe pan, place the block of feta in the center. Scatter the cherry tomatoes around it, press the garlic cloves over the feta, add the chopped broccoli, drizzle with olive oil, and season lightly with salt and pepper.
Time: PT5M
Bake the Feta‑Tomato‑Broccoli Mix
Place the pan in the preheated oven and bake for about 35 minutes, until the tomatoes burst, the broccoli is tender, and the feta softens and begins to melt.
Time: PT35M
Temperature: 400°F
Drain Pasta
When the pasta is al dente, drain it in a colander, reserving about 1 cup of the pasta cooking water.
Time: PT2M
Combine Pasta with Sauce
Remove the pan from the oven, add the drained pasta directly to the baked feta mixture, and stir to coat. Cook over medium heat for 5 minutes, adding a splash of reserved pasta water if the sauce seems too thick.
Time: PT5M
Finish with Basil and Parmesan
Stir in the chopped fresh basil and grated Parmesan cheese until evenly distributed.
Time: PT2M
Serve
Plate the pasta, garnish with extra basil leaves and a generous sprinkle of Parmesan. Serve hot.
Time: PT1M
