Ingredients
- 1/2 medium Red Onion (thinly sliced)
- 1 piece Large Egg (room temperature)
- 1 piece Medium Potato (peeled if desired, cut in half lengthwise)
- 1 tsp Olive Oil (for drizzling)
- a handful Ice Cubes (for shocking the poached egg)
Instructions
Slice the Red Onion
Place the red onion on the cutting board and slice it thinly from top to bottom using a sharp chef knife.
Time: PT2M
Prepare the Potato Skewers
Cut the potato in half lengthwise. If you prefer skin‑off, peel first. Insert a toothpick into each half and twist gently to hold the halves together for easy handling.
Time: PT3M
Boil the Potato Halves
Bring a pot of salted water to a boil, add the potato halves, and cook until just tender (about 8 minutes). Drain and set aside.
Time: PT10M
Temperature: 100°C
Create a Folding Vortex for the Egg
Fill a small saucepan with about 2 inches of water and bring to a gentle simmer (90°C). Crack the egg into the water, then use a whisk to create a gentle vortex, folding the whites around the yolk for 30 seconds.
Time: PT2M
Temperature: 90°C
Shock the Poached Egg
Using a slotted spoon, lift the folded poached egg and immediately transfer it to the ice bath bowl. Let sit for 5 minutes to stop cooking and firm the texture.
Time: PT5M
Assemble the Dish
Arrange the sliced red onion on a plate, place the chilled folded poached egg on top, and add the boiled potato halves on the side. Drizzle with olive oil and finish with a pinch of salt and pepper.
Time: PT3M
