- 1 tablespoon Unsalted Butter (softened)

- 1/2 cup Dry White Wine (dry Chardonnay recommended)
- 2.5 cups Dry Pasta (cavatelli or penne, uncooked)
- 2 cups Chicken Stock (low‑sodium)
- 1 cup Heavy Cream
- 1/2 cup Parmesan Cheese (freshly grated)
- 1 cup Gruyère Cheese (shredded from a block for best melt)

Instructions
Slice the Onion
Trim the ends of the large yellow onion and slice it into 1/4‑inch thick rings, trying to keep the slices as even as possible for uniform caramelization.

Shred the Cheeses
