Ingredients
- 1/4 onion Onion (finely chopped; any color (yellow, white, red) works)
- 1 piece Green Chili (finely chopped; Cheongyang chili recommended, can substitute serrano or jalapeño)
- 1 piece Red Chili (finely chopped; mild, used for color; can substitute red bell pepper)
- 2 stalks Green Onions (thinly sliced; extra optional for garnish)
- 2 cloves Garlic (smashed and finely chopped)
- 1/2 cup Soy Sauce (regular Korean or regular soy sauce)
- 1/2 cup Water
- 2 tablespoons Granulated Sugar
- 1 tablespoon Rice Vinegar
- 1 tablespoon Toasted Sesame Seeds
- 0.5 tablespoon Toasted Sesame Oil
- 0.25 teaspoon Black Pepper
- 6 pieces Large Eggs (soft‑boiled; can use up to 10 eggs)
Instructions
Prepare Vegetables
Finely chop 1/4 onion, 1 green chili, 1 red chili, thinly slice 2 green onions, and smash and finely chop 2 garlic cloves.

Make Marinade
In a large mixing bowl combine 1/2 cup soy sauce, 1/2 cup water, 2 tbsp sugar, 1 tbsp rice vinegar, 1 tbsp toasted sesame seeds, 0.5 tbsp toasted sesame oil, and 1/4 tsp black pepper. Stir until sugar dissolves, then add the chopped vegetables.

Soft‑Boil Eggs
Fill a saucepan with 6 cups water, bring to a rolling boil (100°C), then reduce to low and gently lower 6 large eggs into the water. Cook for 7 minutes.

Shock and Peel Eggs
Immediately transfer the boiled eggs to a bowl of ice water for 5 minutes, then peel them once completely cooled.

Marinate Eggs
Place the peeled eggs into the bowl of vegetable‑soy sauce mixture. Gently stir to coat each egg. Transfer everything into a container with a lid.
