Instructions
Make Garlic Bread Crumb
Break half a loaf of pre‑bought garlic bread into pieces and pulse in a blender until a fine breadcrumb forms.
Time: PT5M
Prep Aromatics and Leek
Slice the garlic cloves, tear the basil leaves, measure 1 tsp oregano, and clean the leek. Cut off the dark green stalk, slice the white part thinly, and rinse the stalk under running water.
Time: PT10M
Sauté Garlic, Herbs and Leek
Heat 2 tbsp olive oil in a large skillet over medium heat. Add sliced garlic, basil, oregano and the sliced leek. Cook, stirring, until fragrant and the leek softens, about 8‑10 minutes. Remove from heat before the garlic browns.
Time: PT10M
Add Tomatoes and Simmer
Stir in the three 400 g tins of canned tomatoes (drained and rinsed). Bring to a gentle boil, then lower to a simmer for 15 minutes, stirring occasionally.
Time: PT15M
Blend Sauce Smooth
Transfer the hot sauce to the blender (or use an immersion blender) and blend until silky smooth. Return the sauce to the skillet.
Time: PT5M
Cook Pasta Al Dente
Bring a large pot of salted water to a boil. Add 500 g pasta and cook for 8 minutes (the package suggests 12 min). Drain, reserving a cup of cooking water.
Time: PT8M
Combine Pasta, Sauce and Spinach
Add the drained pasta to the skillet with the smooth tomato sauce. Stir in the eight 80 g frozen spinach pellets; they will thaw and blend into the sauce. If needed, add a splash of reserved pasta water to loosen.
Time: PT5M
Assemble in Baking Dish
Transfer the pasta‑sauce mixture to a greased 9×13 in baking dish. Sprinkle the grated Parmesan evenly, then top with half of the garlic‑bread crumb and drizzle a little olive oil over the crumb.
Time: PT5M
Bake
Place the dish in a pre‑heated oven at 180 °C (350 °F) and bake for 20 minutes, or until the top is golden and the sauce is bubbling.
Time: PT20M
Temperature: 180°C
Rest and Garnish
Remove from oven, let rest 5 minutes, then scatter the remaining fresh basil leaves on top. Serve warm.
Time: PT5M
