Ingredients
- 500 grams Shrimp (peeled and deveined, pat dry)
- 3 tbsp Unsalted Butter (cut into pieces)
- 4 cloves Garlic (finely chopped)
- 1 small Red Onion (thinly sliced)
- 2 medium Carrot (julienned)
- 1/2 cup Fresh Coriander (chopped, plus extra for garnish)
- 1 ripe Avocado (diced)
- 1 ripe Mango (diced)
- 1 tbsp Lime Juice (freshly squeezed)
- to taste pinch Salt (kosher or sea salt)
- 1 tsp Red Chili Flakes (adjust for heat)
- 2 tsp Sriracha Sauce (for mayo)
- 3 tbsp Mayonnaise (regular)
- 8 pieces Small Flour or Corn Tortillas (keep warm before serving)
Instructions
Prepare vegetables
Julienne the carrots, thinly slice the red onion, finely chop the garlic, and roughly chop the fresh coriander. Set each in separate bowls.

Make avocado mango salsa
Dice the avocado and mango into small cubes, combine in a bowl with 1/2 cup chopped coriander, 1 tbsp lime juice, and a pinch of salt. Toss gently.

Prepare sriracha mayo
In a small bowl, whisk together mayonnaise and sriracha sauce until smooth.

Make garlic coriander butter
Heat the skillet over low heat, add butter and let it melt, then add the finely chopped garlic. Sauté for about 2 minutes until fragrant, being careful not to brown.

Cook shrimp in garlic butter
Add the shrimp to the skillet, season with a pinch of salt, and cook, stirring occasionally, until they turn pink (3‑4 minutes). Sprinkle red chili flakes and toss in the remaining chopped coriander, then remove from heat.

Warm tortillas
Place tortillas in a dry skillet over medium heat for about 30 seconds per side, or microwave covered with a damp paper towel for 20 seconds, until pliable.
