- 1.5 kg Beef Chuck (cut into 2‑cm cubes)
- 1 tsp Salt (kosher or sea salt)
- ½ tsp Black Pepper (freshly ground)
- 2 tbsp Olive Oil (extra‑virgin, for searing)
- 1 large Onion (peeled and diced)
- 2 Carrots (peeled and sliced into 1‑cm rounds)
- 2 Celery Stalks (chopped)
- 3 Garlic Cloves (minced)
- 2 tbsp Tomato Paste (plain, no added sugar)
- 2 Bay Leaves (dried)
- 4 cup Beef Broth (low‑sodium)
- 1 cup Water
- 2 tbsp Cornstarch (mixed with water to form slurry)
Instructions
Prep the Vegetables
Dice the onion, slice the carrots, chop the celery, and mince the garlic. Set aside in separate bowls.

Season the Beef
Pat the beef cubes dry with paper towels, then season generously with salt and pepper.

Sear the Beef
Heat olive oil in a large skillet over medium‑high heat. Add the beef in batches, not overcrowding, and sear until each piece develops a deep brown crust, about 3‑4 minutes per side.

Transfer to Pressure Cooker & Add Ingredients
