Instructions
Prepare the Double Boiler
Fill the saucepan with about 2‑3 cm of water. Bring it to a gentle simmer over medium heat. Place the heat‑proof bowl on top, ensuring the bottom does not touch the water.

Melt the Chocolate
Add the broken chocolate pieces to the bowl. Stir constantly with a spatula or whisk. Use the thermometer to keep the chocolate temperature between 30 °C and 31 °C (just above room temperature).
