- 2 liters Water (enough to fully submerge grapes during soak)
- 0.5 teaspoon Salt (added to cooking water for flavor)
- 100 grams Granulated Sugar (sweetens the juice; about one small tea‑glass)
- 2.5 liters Water (base for boiling grapes)
- 100 grams Grape Pulp (set aside for ice molds; reserved from the mash)
- 1 sheet Food Wrap Foil (covers glass container while freezing)
- 1 set Ice Cube Tray or Molds (optional; for shaping frozen grape ice)
Instructions
Prepare soaking solution
In a large bowl add 2 L water, 1 Tbsp baking soda and 1 Tbsp salt; stir until dissolved.

Soak the grapes
Add the whole grapes to the solution, ensuring they are fully submerged. Let sit for 1 hour without crushing.

Rinse the grapes thoroughly
Drain the soak water, discard it, and rinse the grapes under fresh running water. Repeat rinsing 2‑3 times until the water runs clear.

Boil grapes with sugar and salt
Transfer the cleaned grapes to a pot, add 2.5 L fresh water, 100 g sugar and ½ tsp salt. Bring to a rapid boil on high flame.

Cool the boiled mixture
After 5 minutes of boiling, remove the pot from heat and let the mixture cool completely at room temperature.
