Instructions
Prepare Potatoes
Peel the two large potatoes and slice them as thinly as possible. Transfer the slices to the food processor and puree until completely smooth.
Time: PT4M
Drain Excess Water
Place a clean cheesecloth over a bowl, pour the potato puree onto the cloth, gather the edges and squeeze firmly to extract as much water as possible.
Time: PT2M
Mix Dough Ingredients
Transfer the drained puree to a mixing bowl. Add 1 tsp powdered red pepper, 1 tsp garlic spice, 1 tsp salt, the finely chopped onion, 1 tsp onion juice, 1 tsp grape vinegar, 1 egg, 2 tbsp corn flour, and 1 cup all‑purpose flour. Knead until a smooth, non‑sticky dough forms.
Time: PT10M
Rest the Dough
Cover the bowl tightly with plastic wrap and let the dough rest at room temperature for 30 minutes.
Time: PT30M
Roll Out the Dough
Lightly flour a clean work surface. Place the rested dough on it, cover with another sheet of flour, and roll out as thinly as possible (about 1 mm). Dust the top with flour to prevent sticking.
Time: PT10M
Cut and Shape
Using a sharp knife or pizza cutter, cut the rolled sheet into oval or triangular shapes resembling Pringles. Transfer the pieces onto a parchment‑lined baking sheet, keeping them separate.
Time: PT5M
First Bake
Preheat the oven to 180 °C (350 °F). Bake the cut pieces for 5 minutes until they just begin to set but are not browned.
Time: PT5M
Temperature: 180°C
Cool to Room Temperature
Remove the tray from the oven and let the chips cool on a wire rack until they reach room temperature (about 5 minutes).
Time: PT5M
Heat Oil for Frying
Pour vegetable oil into a deep frying pan to a depth of about 2 inches. Heat over medium‑high heat for 7‑8 minutes until the oil reaches roughly 180 °C (350 °F).
Time: PT8M
Temperature: 180°C
Fry the Chips
Working in small batches, gently lower the pre‑baked chips into the hot oil. Fry for about 1 minute, or until golden and crisp. Remove with tongs and place on paper towels to drain excess oil.
Time: PT1M
Temperature: 180°C
Season the Chips
In a small bowl, combine 1 tsp powdered red pepper, 1 tsp garlic spice, 1 tsp salt, and 0.5 tsp sugar. While the chips are still warm, toss them gently with the spice mixture until evenly coated.
