- 15 g Salt (about 1 tbsp)
- 1 tbsp Olive Oil (extra‑virgin, for dough and brushing)
- 2000 g Beef (marbled, boneless) (well‑marbled, trimmed of sinew)
- 1 large Onion (peeled, quartered for grinding)
- 100 g Plain Yogurt (for meat mixture, adds moisture)
- 2 tsp Ground Cumin
- 1 tsp Dried Mint
- 2 tsp Paprika Powder (sweet or smoked, according to taste)
- 1 tsp Salt (for meat seasoning)
- 1 tsp Black Pepper (freshly ground)
- 1 large Red Bell Pepper (cut into strips for roasting)
- 2 medium Potatoes (thinly sliced)
- 1 medium Zucchini (cut into half‑moons)
- 2 large Garlic Clove (minced, for vegetables)
- 2 tbsp Olive Oil (for tossing vegetables)
- 1 Egg Yolk (mixed with yogurt for brushing flatbread)
- 1 tbsp Sesame Seeds (for topping flatbread)
- 1 tsp Black Cumin (Nigella Seeds) (for topping flatbread)
- 150 g Plain Yogurt (base for garlic‑mint sauce)
- 1 clove Fresh Garlic (minced)
- 1 tbsp Fresh Mint Leaves (finely chopped)
- ½ tsp Salt (for sauce)

Instructions
Prepare the Dough
In a large mixing bowl combine lukewarm water, the yeast cube, 1 tbsp plain yogurt, salt, olive oil and 500 g sifted flour. Mix until a shaggy dough forms, then knead for 10 minutes until smooth and elastic.

First Rise
Cover the bowl with a clean kitchen towel and let the dough rise in a warm spot (or 30 °C oven with light on) for 1 hour, or until doubled in size.

Shape Flatbreads
Punch down the risen dough, divide into 6 equal pieces, and shape each into an elongated oval (about 20 cm long). Place on a parchment‑lined baking sheet, cover, and let rest 15 minutes.

Prepare the Meat Mixture
Trim the beef, cut into long strips (not cubes) and feed through the fine grinder into a large bowl. Add the quartered onion, 100 g yogurt, 2 tsp cumin, 1 tsp dried mint, 2 tsp paprika, 1 tsp salt, and 1 tsp black pepper. Mix thoroughly with a spatula until a sticky paste forms.
