Make the White Sauce
Melt butter in a saucepan over medium heat. Add flour and whisk continuously for 2 minutes to form a roux. Gradually pour in milk while whisking to avoid lumps. Simmer for 5 minutes until the sauce thickens, then stir in grated cheddar, oregano, and chili flakes until the cheese melts.
Time: PT9M
Prepare the Red Sauce
Heat olive oil in a frying pan over medium‑high heat. Add diced capsicum and shredded cabbage, sauté for 3 minutes until slightly softened. Add tomato puree, sugar, heavy cream, ketchup, pizza pasta sauce, red chili powder, and 0.5 tsp salt. Stir well and let simmer for 8 minutes.
Time: PT11M
Combine Sauces into Pink Sauce
In the same pan, pour the white sauce and red sauce together in equal parts. Stir gently over low heat for 2 minutes until the colors blend into a smooth pink hue.
Time: PT2M
Finish the Dish
Transfer the cooked khichdi to a serving bowl, pour the pink sauce over it, and gently fold to coat the grains evenly. Garnish with a sprinkle of extra grated cheese if desired.
