- 1 bottle Malta (12 fl oz, sweet non‑alcoholic malt beverage)
- 1 cup Brown Sugar (packed)
- 1 cup Unsalted Butter (melted, softened)
- 2 large Eggs (beaten)
- 1 tablespoon Orange Zest (freshly grated)
- 2 tablespoons Molasses (for color and depth)
- 1 teaspoon Vanilla Extract
- 1 teaspoon Rose Water
- 2 tablespoons Guava Jam (adds tropical flavor)
- 1 cup Mixed Peel (candied citrus peel, chopped)
- 1 cup Raisins (soaked in rum for at least 30 min)
- 1 cup Cherries (candied, chopped)
- 6.5 cups All-Purpose Flour (sifted)
- 2 teaspoons Baking Powder
- 1 teaspoon Salt
- 2 teaspoons Mixed Spice (Jamaican all‑spice blend)
- 1 teaspoon Ground Nutmeg
- 1 teaspoon Ground Cinnamon
- 2 tablespoons Glaze Jam (same guava jam or any fruit jam)
- 1 teaspoon Glaze Sugar
- 2 tablespoons Glaze Butter (melted)

Combine Wet Ingredients
In a large mixing bowl, pour the bottle of Dragon Stout and the bottle of Malta. Add the brown sugar, melted butter, beaten eggs, orange zest, molasses, vanilla extract, rose water, and guava jam. Stir until the sugar and butter are fully dissolved and the mixture is smooth.

Fold in the chopped mixed peel, rum‑soaked raisins, and chopped cherries. Stir just until evenly distributed.
