- 1 cup Orzo (dry)
- 2 cups Chicken Broth (low‑sodium preferred)
- 1 cup Heavy Whipping Cream
- 1 large Lemon (juiced (about 2 tbsp))
- 2 cups Cooked Shredded Chicken (can be rotisserie or instant‑pot shredded)
- 0.5 cup Parmesan Cheese (shredded)
- 4 cups Fresh Spinach (packed, roughly chopped)

Dice half of a white onion, mince the garlic, shred the cooked chicken, and juice one lemon.

Heat the skillet over medium heat, melt 1 tbsp butter and add 1 tbsp olive oil. Once hot, add the diced onion and cook, stirring occasionally, until softened and translucent, about 6 minutes.
