Ingredients
- 500 g King Prawns (peeled and deveined, large)
- 3 cloves Garlic (minced)
- 1 tsp Chipotle Paste (adjust to taste for heat)
- 1 whole Lime (fresh juice, divided between prawns and guacamole)
- 5 tbsp Unsalted Butter (divided: 4 tbsp for sauce, 1 tbsp for prawns)
- 2 tbsp All-Purpose Flour (for roux)
- 240 ml Whole Milk (for a creamy sauce)
- 150 g Sharp Cheddar Cheese (grated)
- 0.5 tsp Salt (to taste)
- 0.25 tsp Black Pepper (freshly ground)
- 0.25 tsp Garlic Granules (optional)
- 0.25 tsp Smoked Paprika (for extra flavor)
- 1 whole Avocado (peeled, pitted and diced)
- 30 g Red Onion (finely diced)
- 1 tsp Lime Juice (extra for guacamole)
- 200 g Tortilla Chips (sturdy, restaurant‑style)
- 120 g Black Beans (canned, drained and rinsed)
- 120 g Tomatoes (fresh, diced)
- 2 tbsp Pickled Jalapeños (sliced, optional)
- 2 tbsp Fresh Coriander (chopped, for garnish)
Instructions
Marinate the Prawns
Place the raw king prawns in a mixing bowl, add the minced garlic and 1 tsp chipotle paste. Stir until the prawns are evenly coated. Let sit while you prepare the other components.

Sear the Prawns
Heat a skillet over medium‑high heat, add 1 tbsp butter, then add the marinated prawns. Sear 2 minutes per side until pink and just cooked through. Finish with a squeeze of fresh lime juice.

Make a Roux
In a saucepan melt 4 tbsp butter over medium heat. Sprinkle in the flour and whisk continuously for about 2 minutes until the mixture turns a light golden colour.

Gradually whisk in the whole milk, a little at a time, allowing the mixture to thicken before adding more. Once smooth, stir in the grated cheddar until fully melted.
