Ingredients
- 3 cups Water (for boiling noodles)
- 1 packet Maggi Noodles (Masala) (break into pieces before adding to water)
- 2 tablespoons Vegetable Oil (for sautéing vegetables)
- 2 cloves Garlic (finely minced)
- 1 small Onion (thinly sliced)
- 1/2 cup Bell Pepper (diced, any colour)
- 1 piece Green Chili (finely chopped, adjust to heat preference)
- 1 tablespoon Soy Sauce (light soy preferred)
- 1 teaspoon White Vinegar
- 1 tablespoon Chili Sauce (store‑bought Indian chili sauce)
- 1 tablespoon Chili Garlic Sauce
- 1 tablespoon Ketchup
- to taste Salt
- to taste Black Pepper
- 100 grams Paneer (cut into 1‑cm cubes, firm Indian cottage cheese)
- 1 teaspoon Butter (for sizzling on hot tawa)
- 2 tablespoons Fresh Cilantro Leaves (optional garnish, torn)
Instructions
Boil Water and Pre‑cook Maggi
Heat the kadhai over medium heat, add 3 cups of water and bring to a rolling boil. Break the Maggi noodle cake into pieces and drop into the boiling water. Cover and cook for 1 minute.

Drain and Rinse Noodles
Turn off the heat, pour the contents into a colander, rinse quickly under cold water to stop cooking, and set aside.

Sauté Aromatics and Veggies
In the same kadhai, add 2 tbsp oil, then sauté minced garlic, sliced onion, diced bell pepper and chopped green chili for about 30 seconds until fragrant.

Add Sauces and Seasonings
Stir in soy sauce, white vinegar, chili sauce, chili garlic sauce, ketchup, a pinch of salt and pepper. Add a splash of water (about 2 tbsp) and the Maggi masala packet. Cook, stirring constantly, for 30 seconds until the mixture thickens.
