Ingredients
- 2 large Green Mango (peeled, cut into small pieces)
- 4 cups Water (for boiling mango pieces)
- 0.5 teaspoon Salt (adjust to taste)
- 0.5 teaspoon Red Chili Powder (or to taste)
- 2 tablespoons Granulated Sugar (adjust sweetness as needed)
- 1 tablespoon Ghee (for brushing the set bar)
Instructions
Prepare Mango Pieces
Peel the two large green mangoes, cut them into small bite‑size pieces and set aside.
Time: PT5M
Blanch Mango
Bring 4 cups of water to a boil in a pot, add the mango pieces and blanch for about 1 minute until slightly softened.

Temperature: 100°C
Blend to a Smooth Paste
Transfer the blanched mango pieces to a blender and blend until a smooth puree forms.

Season the Puree
Heat a non‑stick pan over medium heat, pour the mango puree in, then add ½ tsp salt, ½ tsp red chili powder and 2 tbsp sugar. Stir continuously.

Temperature: 180°C
Set the Bar
Transfer the cooked mango mixture onto a clean plate or tray, spreading it to an even ½‑inch thickness. Brush the surface with 1 tbsp ghee.

Sun‑Dry
Place the plate in direct sunlight for about 6‑8 hours (or until the bar feels firm to the touch). If sun‑drying is not possible, bake at 120°C for 30‑40 minutes.
