Ingredients
- 2 pieces Stale Roti (day‑old whole wheat roti, torn into bite‑size pieces)
- 1 cup Nachos (store‑bought corn tortilla chips)
- 1 medium Bell Pepper (any colour, diced)
- 1 medium Onion (finely chopped)
- 3 tbsp Mixed Pizza Sauce (blend of ketchup, mayonnaise, chili sauce and a pinch of oregano)
- 1 cup Shredded Cheese (mozzarella or cheddar, grated)
- 1 tbsp Butter (for onion gravy)
- 1 tsp All‑Purpose Flour (for thickening gravy)
- 0.25 cup Water (for onion gravy)
- to taste Salt
- to taste Black Pepper
- as needed Cooking Spray (for air‑fryer basket)
Instructions
Break the stale roti
Tear the two stale rotis into bite‑size pieces and set aside.

Prepare the pizza sauce
In a mixing bowl combine ketchup, mayonnaise, chili sauce and a pinch of oregano; stir until smooth.

Chop vegetables
Dice the bell pepper and finely chop the onion; keep them separate.
Time: PT3M
Make onion gravy
Melt butter in a small pan, add flour and stir for 1 minute, then whisk in water, salt and pepper; simmer until slightly thickened.

Assemble the base layer
Place one roti piece on a plate and spread a thin layer of the mixed sauce over it.

Add second roti and toppings
Lay the second roti on top of the sauce, sprinkle nachos, diced bell pepper, chopped onion and half of the shredded cheese.
