Prep: 15 min | Cook: 45 min | Total: 1 hr 10 min
Cost: $10.98 total, $2.75 per serving
Ingredients
- 4 pieces Chicken Thighs (Bone‑in, skin‑on; about 1.5 lb total)
- 1.5 lb Baby Potatoes (Halved or quartered to 1‑inch pieces)
- 12 oz Green Beans (Trimmed ends; whole or halved)
- 3 Tbsp Olive Oil (Extra‑virgin preferred)
- 1 tsp Garlic Powder (Adds savory depth)
- 1 tsp Paprika (Smoked paprika optional for extra flavor)
- ½ tsp Dried Thyme (Fresh thyme can be used (1 tsp))
- 1½ tsp Salt (Kosher or sea salt)
- ½ tsp Black Pepper (Freshly ground)
Instructions
Preheat Oven
Set the oven to 400°F (200°C) and let it preheat while you prepare the ingredients.
Time: PT10M
Temperature: 400°F
Prepare Vegetables
Wash the baby potatoes and cut them into 1‑inch cubes. Trim the ends off the green beans and halve them if they are long. Place the potatoes and green beans in a mixing bowl, drizzle with 2 Tbsp olive oil, and season with ½ tsp salt, ¼ tsp black pepper, ½ tsp garlic powder, and ½ tsp dried thyme. Toss until evenly coated.
Time: PT10M
Season the Chicken
Pat the chicken thighs dry with paper towels. Rub each thigh with the remaining 1 Tbsp olive oil, then season with the remaining 1 tsp salt, ¼ tsp black pepper, ½ tsp garlic powder, 1 tsp paprika, and the rest of the thyme. Make sure to season both sides.
Time: PT5M
Arrange on the Baking Sheet
Line the baking sheet with parchment paper or foil for easier cleanup (optional). Place the seasoned chicken thighs skin‑side up in the center of the sheet. Spread the seasoned potatoes and green beans around the chicken in a single layer, ensuring nothing is piled on top of the chicken.
Time: PT5M
Roast the Dish
Transfer the sheet to the oven and roast for 45 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are fork‑tender. If the chicken skin isn’t golden enough, switch to broil for the last 2‑3 minutes, watching closely.
Time: PT45M
Temperature: 400°F
Rest and Serve
Remove the pan from the oven and let the chicken rest for 5 minutes before serving. This allows the juices to redistribute.
Time: PT5M
Cleanup
While the chicken rests, wash the mixing bowl, tongs, knife, cutting board, and any other used utensils. If you used foil or parchment, discard it and wipe the baking sheet.
Time: PT10M
