- 1 kg Beef Tripe (Matumbo) (washed and cleaned thoroughly)
- 1 tbsp Cooking Oil (vegetable or canola oil)
- 2 large Onion (peeled and sliced)
- 6 cloves Garlic (crushed)
- 1 thumb-sized piece Ginger (peeled and crushed)
- 3 medium Tomato (diced)
- 1 Green Capsicum (chopped, keep crunchy)
- 0.5 Lemon (juice only)
- 2 Beef Seasoning Cubes (or equivalent amount of salt)
- to taste Salt (only if seasoning cubes are omitted or additional seasoning needed)
- a handful Fresh Coriander (chopped for garnish)
- 2 tbsp Water (for cooking tomatoes)
Instructions
Clean the Matumbo
Rinse the 1 kg of matumbo under running water, scrub each piece, and repeat washing until the water runs clear to remove all dirt and odor.

Pressure‑Cook the Matumbo
Place the cleaned matumbo in the pressure cooker (no extra water needed as it has soaked), close the lid and cook on high pressure for 3–4 whistles (about 15 minutes) until tender.

Release Pressure and Drain
Manually release the pressure, open the cooker, stir the matumbo and discard the excess water that has been absorbed during cooking.

Sauté Onions
Heat a frying pan over medium‑high flame, add 1 tbsp cooking oil, then add the sliced onions and sauté for about 1‑2 minutes until golden brown.

Add Garlic and Ginger
Add the crushed garlic and ginger to the pan and cook for 30 seconds until fragrant.

Cook Tomatoes and Seasoning
