Ingredients
- 40 grams Almonds (roasted)
- 40 grams Pistachios (roasted)
- 20 grams Cashews (roasted)
- 60 ml Ghee (for roasting dry fruits and sevai)
- 120 grams Sevai (Vermicelli) (thin, roasted until light orange)
- 200 grams Granulated Sugar (ground to fine powder)
- 120 grams Milk Powder (full‑cream milk powder)
- 2 grams Cardamom Powder (ground green cardamom)
- 0.1 grams Saffron (about two pinches, preferably soaked in warm milk)
- 1 liter Full‑Fat Milk (preferably fresh)
Instructions
Roast Dry Fruits
Heat the non‑stick pan over medium heat, add 30 ml ghee, then add almonds, pistachios and cashews. Roast, stirring constantly, until they turn golden and fragrant (about 5 minutes).

Roast Sevai
In the same pan, add the remaining 30 ml ghee and the sevai. Roast, stirring, until the sevai turns a light orange color and becomes crisp (about 4 minutes).

Cool the Sevai
Transfer the roasted sevai to a plate and let it cool completely (about 2 minutes).

Grind Sugar
Place the granulated sugar in the grinder and pulse until it becomes a fine powder.

Prepare Premix
In a large mixing bowl combine the roasted dry fruits, roasted sevai, powdered sugar, milk powder, cardamom powder, and saffron. Mix thoroughly until everything is evenly coated.

Boil Milk
Pour 1 liter of milk into a saucepan and bring to a rolling boil over medium‑high heat.

Add Premix to Hot Milk
Reduce the flame to low, then gradually add the prepared premix to the hot milk while stirring continuously.

Thicken and Finish
Turn off the heat. Let the Sheer Khurma sit for about 5 minutes; it will thicken further as it cools.
