Ingredients
- 1 cup Semolina (Suji) (fine grade, roasted lightly before use)
- 3/4 cup Ghee (unsalted, melted)
- 1/2 cup Granulated Sugar (adjust sweetness to taste)
- 1 cup Water (filtered, room temperature)
- 1 cup Whole Milk (full‑fat for richness)
- 5-6 strands Saffron Strands (soaked in 2 tbsp warm water)
- 2 tablespoons Cashew Nuts (sliced)
- 2 tablespoons Almonds (sliced)
- 1/2 teaspoon Green Cardamom Powder (freshly ground)

Instructions
Prepare Nuts
Slice the cashew nuts and almonds on a cutting board using a knife. Set aside in a small bowl.

Soak Saffron
Place 5‑6 saffron strands in 2 tbsp warm water and let steep for 5 minutes.

Heat Ghee
Add 3/4 cup melted ghee to the heavy‑bottomed pan and heat over medium flame until shimmering.

Fry Nuts
Add the sliced cashews and almonds to the hot ghee. Fry, stirring constantly, until golden brown (about 3‑4 minutes). Remove with a slotted spoon and set aside.

Roast Semolina
Add 1 cup semolina to the same ghee. Roast, stirring continuously, until the semolina turns light golden and emits a nutty aroma (5 minutes).

Add Liquid
Pour in 1 cup water and 1 cup whole milk (pre‑warmed) while stirring briskly to avoid lumps. Continue cooking, stirring, until the mixture thickens and the semolina absorbs all liquid (8‑10 minutes).

Sweeten and Flavor
Stir in 1/2 cup granulated sugar, the saffron‑water mixture, and 1/2 tsp cardamom powder. Cook for another 2 minutes until the sugar dissolves and the saffron color spreads evenly.

Turn off the heat. Sprinkle the fried cashews and almonds on top, give a gentle stir, and let the sheera rest for 2 minutes.
